BooMama's Souptacular Crockpotalooza

YUMMY! It's that time of year! Here at the Douglas household, we love white chicken chili. I have also cooked this recipe without the crock pot but for the sake of BooMama, I have included the crock pot method.
I have a really big crock pot and this recipe makes a lot. I always have to make enough for my grandmother, Nene. She is the one that strongly suggested that I make this the first time. Here it goes....
White Chicken Chili
2 pounds of boneless, skinless chicken, cubed (We like a lot of chicken)
2 cans Northern beans (15 ounces)--strained
1 can white corn (15 ounces)--strained
1 envelope of taco seasoning (sometimes I use 2, just depends on my mood)
1 can of chopped green chilies (4 1/2 ounces)--strained
1 can of condensed cream of chicken soup (10 3/4 ounces)
1 can of chicken broth (about 14 - 16 ounces, I usually have some in the freezer, but I have used
the carton kind)
Optional garnishes: sour cream, green onions, cheddar cheese, Monterrey jack cheese, tortilla chips
1. Place chicken in your crock pot
2. Top with beans and corn
3. In separate bowl, combine taco seasoning, chilies, soup and broth. Then pour this mixture into the crock pot.
4. Cover and cook on low for 8 - 10 hours.
5. Ladle into bowl. Garnish and enjoy!

The One Where I Eat my Foot

You know how all Friends episodes were called "The One where....". I use that little phrase a lot. I was a big Friends watcher. I tell you this so you will understand my title.

Over the weekend, the hubby was feeling a little run-down. I really don't know why. I mean, who can't handle working 10 hour days at school then working on an old dilapidated house for 6 hours at night. Keep up, honey. I was giving him a little ribbing. You know, like, "Are you just going to watch TV today?," "What are you going to do after this show?," or my personal favorite, "Are you glued to the couch?"

Needless to say, I'm a slave driver. Just call me Sergeant Carter (let me know if you remember that TV reference).

Nothing much was accomplished at the ol' homestead over the weekend. I had had high hopes of a painted kitchen or maybe even the last coat of red on the dining room walls, but alas to my dismay, nothing, nada, zilch.

The hubby calls me Monday afternoon and states that he is going to the doctor. I was all, "Why? What's wrong with you? I mean you've already had mono." First off, the hubby does not go to the doctor on his own accord. I mean, he never, ever goes. I think to myself, "Maybe he really doesn't feel well."

He goes to the doc while I'm at dance with MM. He calls me directly after dance as we are loading into the car. I don't answer. I couldn't answer. I didn't have a free hand. Have you ever tried getting two little ones into the car making sure no playing in the road ensues? So I finally call him back.

He has big news. He has pneumonia. That's right, pneumonia. He's almost gloating, like he wants to say, "I told you so."

I felt horrible. I still feel horrible. I can't believe I gave him such a hard time with my, "Do this! Do that!"

He's actually missed school this week and the hubby NEVER misses work.

So here I am, with my foot in my mouth again...not the first time and I'm sure not the last.

I was wrong. I admit it. It's a rare occurance (just kidding), but I was wrong.

Not Me Monday


Over at My Charming Kids, MckMama has Not Me Mondays. I decided to participate.


I did not leave Harper Jane in pajamas 2 of the last 4 days.


I did not swing by Burger King to buy HJ breakfast this morning just so I didn't have to fix it.


I did not not fold clothes over the weekend allowing 5 loads to accumulate. Scary, huh?


I did not let Mary Margaret stay out of pre-school on Friday just because I was too tired and needed to sleep.


I did not contemplate not taking MM to dance this afternoon just because I was too tired. (Beginning to see a theme here? I am).


I did not not comment on my bloggy friends' blogs again this week. I'm awful and ask for forgiveness.


I did not regret letting MM watch Heidi yesterday with Shirley Temple. MM got extremely upset toward the end of the movie when Heidi wanted her grandfather and she wasn't allowed to return to him. MAJAH drama and tears over a movie, a MOVIE, people!

I'm BAAAAA-AAACK!

Kind of.

I at least have internet access....it really has been like camping.

I can not tell you how happy I was when the hubby told me tonight that the internet was up and running here in the Douglas home RV. I think those were tears I felt rolling down my cheeks.

It has been traumatic. I may be scarred for life. At least I still have my sense of humor. We have actually had fits of laughter around here. Stress will do that to ya.

Anyway, glad to be semi-back. I'm "marking all as read" on the ol' Google Reader (btw, I had 392 blogs entries to read). I'm going to scan through some but I'm not going to comment. Please forgive me.

I can't wait to catch up:)

I'll tell you more about the house when I'm ready. It's a process, people. It takes time....or at least I've been told that (over and over and over again).

FYI

I know I have been a little scattered as of late...really, I have. I know. Sorry I'm not commenting on your blog as much. This renovation project has turned into my life. Seriously. We will be moving on Saturday (the second move in 2 months with 2 young children) into an unfinished house (unfinished means no kitchen sink for a month, rooms not completely painted, holes in the upstairs' flooring, etc.). It will be kind of like camping and you know how I feel about camping. I love camping about as much as I love going to the doctor (you know, the female visits). Yes, camping and I do not get along....it will be a long month. We still have a long way to go on the house so I won't be posting any pics YET.

I'll be back (Say that like the Terminator)!
